Add a little twist to the standard holiday fare and tantalise your taste buds with this fuss-free recipe for a South Asian favourite, Vadai. Made with ingredients that you can find easily in the market or even in your home garden, this savoury treat is sure to whet appetites and leave your guests wanting more.
Vadai

Ingredients
30g of curry leaves – thinly shredded
8 small shallots – chopped
2 large green chillies – thinly sliced
500g Vadai flour mix
3 eggs
Cooking oil
Fish sauce
Ikan bilis – fried (optional)
Method
- Beat eggs
- Mix ikan bilis, eggs, green chillies, onion, curry leaves and flour mix in large bowl. Season to taste with fish sauce.
- Heat oil in pan.
- Scoop the batter using a tablespoon to form balls.
- Fry scoops in pan.
- Serve while hot.
